Pale ale malt (well-modified and suitable for single-temperature infusion mashing); can use a complex variety of hops (English, American, noble). American yeast that can give a clean or slightly fruity profile. Generally all-malt, but mashed at lower temperatures for high attenuation. Water character varies from soft to moderately sulfate.

Yeast Strain(s) Used: 1056 American A6 Strain
Fermentaion Temp: 68°F
A double IPA with a slight citrus finish from the Simcoe hops. We went with 11 lbs of 2-Row Briess, dropped the Pale Malt and added 2 lbs of Crystal malt 40 to give it a little more body. This is a simple mash (all grain in at the same time and same temp) and a busy boil to get the full rounded, copious hop experience of bitter, flavor and aroma...finishing with a 3oz dry hopping in the secondary.
