The sweetness in most Sweet Stouts comes from a lower bitterness level than dry stouts and a high percentage of unfermentable dextrins. Lactose, an unfermentable sugar, is frequently added to provide additional residual sweetness. Base of pale malt, and may use roasted barley, black malt, chocolate malt, crystal malt, and adjuncts such as maize or treacle. High carbonate water is common.

Some tricks to get that special taste/feel of Guinness:... 1) The 2 lbs of Flaked Barley helps with the creamy head. ...2) Use .25 lbs of Acidulated Malt in the mash (not listed in the grain bill because it is not an option in the drop down menu for grains)...3) Sour 2 bottles or cans of Guinness by leaving the contents out in a bowl for 4-7 days before brew day. Add the soured at flame out.... 4)Make your yeast starter 24 hrs prior to brewing and add a bottle of Guinness to the starter at pitch time.
